I “created” a mocktail! 😗🍹

Hi everyone! How are you? What’s the weather like where you are? (The questions are being thrown at you today! 🤣). For a good while now there has been a storm circulating around Ireland with a lot of flooding and I’ve been here wanting to bring something from lighter days into the current moment 🍹. I thought it would be good to carry on the new years posts on a refreshing note so I’mma share a mocktail I made recently! 🍃 It’s a twist on the OG mocktail I normally make which isn’t my recipe but I think I kind of made this one my own! 😏 And yeah February is still the new year, we’re only just getting started!

I was making a roasted peanut chicken dish recently and it asked for courgette but we didn’t have any so I used cucumber instead and removed the watery inside. I didn’t want to waste this cucumber juice/insides so I decided to use it in a drink instead! 👏

We were running out of the orange & mango Robinson’s cordial I usually put in mocktails so I used the last drops with some plain orange juice and combined this with a bottle of fizzy ginger ale, the cucumber juice and lime zest & juice in a jug. I then put ice in some cups, some mint (that first time we didn’t have fresh so I added dried but I have since used some and it kinda tastes the same both ways) and I poured the jug mixture into the cups. The result is a real delight for the senses! 😙🤣

I would highly recommend this mocktail if you’re looking for an alcohol-free drink with a kick thats refreshing and flavourful. The addition of the cucumber adds some texture & I now always aim to make my mocktails this way!
