Hi everyone! I hope you’re doing well ๐. Welcome back or to my blog in the first place if you’re new here! Today’s blog post is a recipe you guys are going to thank me for, I’m sure of it! ๐ It’s a Donal Skehan recipe I got from a library cookbook called Eat. Live. Go and I’ve made it twice so far, once with rhubarb when that was in season and the second time with apples. Both times were a complete success and the crumble cakes went down a hit with my family so I’m very excited to be sharing the recipe here with you today!! It’s the perfect Autumnal or simply a cold weather treat. I like to think of it as a hybrid recipe, crumble and cake so you get more bang for your buck. Let’s jump right in…..

Ingredients
For the cake
- 100g butter, plus extra for greasing
- 150g soft light brown sugar
- 2 large eggs
- 75ml milk
- 200g plain flour, sifted
- 1tsp baking powder
- Pinch of salt
- 1 tsp cinnamon powder
- 300g rhubarb, trimmed and finely sliced or apple, remove the skin and chop into small chunks.
For the crumble topping
- 150g plain flour
- 150g jumbo rolled oats
- 175g soft light brown sugar
- 200g cold butter, cut into pieces
- Icing sugar, to dust (optional)
Method
1. Preheat the oven to 180ยฐC (160ยฐC fan) and grease and line a 20cm spring-form cake tin with parchment paper (I like to use those giant cupcake cases you can get that work just as well as baking paper!).
2. With a hand held mixer, beat the butter and sugar in a large bowl. Add the eggs, one at a time whilst mixing before adding the milk, mix, mix, mix baby! ๐คฃ
3. Fold in the flour, baking powder, salt and cinnamon until it reaches a batter like consistency.
4. Pour the batter into the tin and add either the rhubarb or the apple to the top. Make it look all pretty and stuff! ๐
5. For the crumble topping, place the flour, oats, sugar and butter in a bowl and rub the ingredients together with your fingers. It’s a bit messy but it’s well worth it in the end I promise! Then sprinkle the crumble onto the batter.
6. Bake in the oven for 1 hour and 10 minutes. Once out of the oven, leave it to cool before removing it from the tin and devouring every last morsel of the damn thing! (Or you could just decorate it with icing sugar first ๐ ๐คฃ).
And there we have it! I really really hope you like this crumble cake if you do in fact try it out, there’s nothing quite like a homemade crumble let alone a cake too so I reckon this recipe is well worth trying if I do say so myself ๐คฃ.
