I made my fav rocky road cookies…..but they went all kinds of wrong! πŸ˜…πŸͺ

Heyyy!! I’m back for the second week and I brought cookies with me 🀀…..the main batch didn’t necessarily turn out right so naturally I fake baked with a kit and redeemed myself later on but details shmetails 😁. Am I right in saying I know the way into your hearts with cookies in general tho? πŸ˜…πŸ’— How is life with you guys? Wait, is that question to broad and hopeful of a huge answer? Probably but I’d like to know anyway 🀣.

The roots of today’s post are from a time of life not that long ago 😲, the mid to tail end of April to be exact πŸ˜‚. Back when soft food wasn’t as much my nemesis and I didn’t know I’d be getting my wisdom teeth removed a few weeks later 🦷…….that would have made for a good pun if root and tooth were closer in written proximity but oh well, can’t have it all! 🀣

Around that time I looked back on a recipe for ooey gooey rocky road cookies which you can find here on Fifteen Spatulas (No regrets will derive from following that goddess of a cookie method). Now let me tell you, those cookies just so happen to be the batch I made and shared on my June 2020 favourites post and were part of the notorious lockdown zoom bake offs I was into back then that went on for so long, leaving a load of yummy memories in their wake 🀀.

They have to be my favourite cookies EVER and I’ve craved them since but sugar hasn’t become my best friend. It tends to bring on flare-ups of chronic pain legwise so aside from the occasional craving that I stupidly give into, I’m really trying to distance myself from it whenever possible.

In trying to solve the case of the best cookies (in my not so humble opinion) having way too much icing sugar I did something that ruined the recipe I fell in love with, almost entirely……so much that for a while I couldn’t even look at that mesmerizing photo above without feeling a bit meh 🀒.

Okay so maybe I’m being a bit dramatic! It wasn’t exactly a sickening experience per se and they weren’t ALL kinds of wrong (they still looked pretty good) but I ended up making them incredibly sweeter by adding no real sugar at all.

I put in Splenda, the sugar alternative and my god, for a while I was like “YUM, everybody try these! They’re like replicas 😲” and I went around the house with a plateful handing them out. Only to be told to wait for the kick….

Mmmkay, so I tried again πŸ€”

….the flavour kick was a sweet that no sugar could possibly compare to (and not in a good way πŸ˜‘). I don’t even know how I missed it in that first taste test! Strangely enough I remember feeling more aches and pains from them than I get from real sugar which is really weird because I didn’t add as much, a little is meant to go a long way (I guess it went too far). I suppose a lot of sugar free stuff can have adverse affects on people through what is used in the makeup as a replacement although I just thought that was in the stomach ache department, you live and you learn! πŸ˜‚.

It turns out my so called replacement ingredient was no match for the infamous cookies and not even worth keeping in mind for future reference (aside from to write this post of course 🀷😏). It’s always the things that are bad for you that taste good and vice versa…..unless you’re in a sandwich bar and they’ve got a nice salad with a magically unrivaled dressing that they won’t reveal the secret for, in which case that’s good for you AND it tastes amazing πŸ™ŒπŸ˜‚πŸ₯—.

I didn’t give up entirely after that on the cookie front tho! Well I did move away from the rocky road recipe but still I wanted cookies so I used a box kit instead (please condone my behavior and tell me you’ve done it too, working your way down the list of options is better than giving up completely! πŸ™ŒπŸ˜‚). At first I hadn’t planned for the kit to in any way replace the events that went down in that kitchen beforehand, I’d just wanted a box bake to have fun with as they’re so simple to use and I mostly just wanted to mindfully mix something in a bowl + watch it all bind together ✨🀣. But after those mishaps it became something more, a mission to have a treat with no backlash! If there’s anything (specifically food) that you can’t have but love a lot then we’re on the same page (and I’m also intrigued to know what it is for you so feel free to type that out in the comments in a venting your frustration kinda way! Over sugar I miss cheese the most for sure πŸ§€πŸ˜‹).

The kit I used was called Spirit Lifters (which I needed at that point πŸ˜‚) chocolate cookie mix by the Superfood Bakery and I can vividly remember that day as in general it was just so nice and bright with the golden sun shining in for the afternoon 🌞. Although these cookies weren’t sugar free they were empty in a lot of other things which I reckon contributed to the fact that the sugar content wasn’t huge (or as impactful as my previous attempts which is the best road to avoid πŸ˜‚). I added marshmallows to the tops of each of them before popping them in the oven and voila! Here’s some animation clips of my experience leading up to a photo of the end result (I find them easier than videos as then there’s no sound to edit out 🀣, just a load of picks grouped together in stop motion). Let’s be honest, only my first batch way up above looked delicious and the second almost met that (by eye alone!), these look a bit odd in comparison (almost like Cadbury creme egg which would be delish) but they tasted quite nice and not too sweet at all! They could have done with more cocoa powder so seeing as we got another box I’ll for sure be upgrading them at a later date πŸ’―. They make for a nice snack when a pick me up is needed as I don’t know about you but sometimes I’ll massively crave a lil bit of sweetness/salt and not only in moments of pain (with migraines I’ll mostly want stodgy/comfort food like yorkshire puddings with gravy if anything at all 😍). Maybe this could be the start of my public plan to find sweet stuff that’s not detrimental to my health here on the blog! πŸ€” I like how that would open up a host of opportunities and welcome old favs and new foodstuffs into my life so we’ll just have to wait and see whether it pans out or not πŸ˜„πŸ₯ž.

    1. Rocky road ice cream is delish! Haven’t had it in years but remember it was very nice. You definitely should! They pack a bigger punch than choc cookies with the extra chips & marshmallows 🀀
